If you’re like me, there are mornings when you are in a hurry and you like to find your breakfast already prepared and ready to eat. This is how I would describe all of my workday mornings! Given enough time, I have started adding smoothie bowls and overnight oats to my “toasts or cereals” routine, but sometimes it’s nice to eat something else for variety.
The so-called “yogi bowl” of my favourite café as a young student is an old favourite of mine, and it is astonishingly easy to prepare. In many regards, we could see it as the grand-papa of the smoothie bowl, because it’s fruit and yoghurt, topped with granola. For this recipe, since I’m a big fan of strawberries, I’ve used fresh strawberries, but you could use any berry you like.
In any case, remember to start the day with a healthy breakfast, as the food you eat is your fuel during the day.
This extremely easy recipe is great to take with you to work, school, or the gym.
“Yogi” bowl, or strawberry and yogurt, topped with granola
Yields: 1 bowl
Preparation: 5 minutes
Calories: 345 calories per bowl (calories have been calculated for 1 cup strawberries and So Delicious’s unsweeted coconut milk yogurt)
- ¾ to 1 cup quartered strawberries
- 1/2 cups “yogurt”
- 1/4 cup granola
- 1 tbsp almond slices or whole almonds
- 1 tbsp maple syrup
- Wash and quarter strawberries, then transfer to a bowl.
- Cover these strawberries with the yogurt.
- Sprinkle granola and almond slices on top, and pour just a little bit of maple syrup to sweeten the granola.
